Tarragon Chicken

So, this is my first recipe post and I'm slightly nervous! 

I used to cook loads and was starting to become a bit of a whizz in the kitchen! But then we embarked on our overseas adventures and the cooking was swapped with a lot of eating out and opting for more quick and easy and well, lazy meals. 

I really want to get back into it, as I do love being in the kitchen!

OK... so here is what I made up last night, there wasn't much in the cupboards, so I threw a few things together and voilá, My Tarragon Chicken.
Ingredients

Chicken Breasts 
( I used 4, this was plenty for 2 peeps!)
Mushrooms
1 x Onion
Tarragon
Garlic
Oil
 ( I used garlic oil, as I looooove garlic!)
Cheese
(Optional, this was hubby's input!)




Peel the onion and chop into quarters.

Separate the segments and place in an ovenproof dish.


Peel, de-stork and chop mushrooms. I like mine chunky, but sliced will work too.

Peel the garlic, I used quite a bit, but use as much or as little as you like! 
Don't chop, just squish the pieces with the flat side of your knife.

Add the mushroom and garlic to the onion.

Chop your chicken into cubes.


Place on top of the onion, mushroom & garlic.

Drizzle with the (garlic) oil.

Sprinkle the tarragon all over. Again I looooove tarragon, so I went crazy!


Place in a pre-heated oven 200c for about 45 mins. 
Note, DO NOT cover! 
I put tin foil over it and the first 25mins nothing happened! 
Well, it's all about trial and error this cooking lark!!

About half way through, give it a good stir and mix everything up.



Obviously, being chicken, cook until there's no pink bits and you're happy it's cooked through!



Smother with grated cheese.


Pop back in the oven until the cheese has melted and starts to bubble slightly.


Serve and enjoy! 


Some crusty bread would accompany this a treat!

If you're trying to be a little more health conscious then, umm, us! lol. Try without the cheese and have a leafy green salad on the side!
