Tomato & brown pasta with a twist

I'm certainly enjoying hunting out different recipes and ideas to stay healthy! It's really helping me stay focused and on the healthy path!

OK, so this pasta dish is so easy to make it's crazy! Are you starting to see a theme here - quick, simple, easy, healthy recipes! Love it!

You will need:

Brown Pasta (pasta & rice will always be brown from now on guys!)
Onion
Garlic
Tin of Chopped Tomatoes
Tuna
Basil


Chop the onion and garlic finely and add to a saucepan with a dash of olive oil in. Soften them. Add the chopped toms and a generous amount of Basil (I do like my Basil!). Keep stirring until it bubbles then turn down to simmer. Drain Tuna. Add it to the mix. Stir and leave to simmer.

In a seperate pan, boil some water & add the pasta.

*side note - 1 portion of pasta is about 30g! Yes, I was shocked too - but trust me it is plenty! I also used a small tin of tuna, if  you'rmaking this for two just use a regular sized tin.


So once the tomato mix has turned a tad gooey, basically any watery juice cooked off, add your cooked pasta to it and stir.

I love how the tuna (which btw is the twist part!) kinda gives a cheesy texture. I used to love smothering pasta dishes like this with grated cheese, but when they're made quite stodgy, I find there's no need too and the flavour of the Basil really works well with the Tomatoes.


And serve! I was quite surprised that it did give me quite a healthy portion too. Another tip guys - use smaller plates - if you have massive ones you will naturally want to fill it! Portion control as well as calorie control!
