Chicken and Bacon Alfredo

I made this little recipe last night and it turned out quite well. Top marks from hubs! It came together as I was just scratching around with what we already had in. You will need (for two):-

2 x Chicken Breasts
(I used back bacon, 5 rashers, un-smoked)
1 x Onion
Alfredo Sauce 
(I used the packet mix, as that was what we had in, 
but I would recommend trying a jar version 
or making your own from scratch!)

First of all prep. I always like to prepare everything first and set it out in bowls. So much easier when you come to cook your dish, to have everything to hand!

*Chop your Chicken into cubes
*Roughly chop the Bacon
*Peel & de-stork Mushrooms, slice
*Peel & chop the Onion and Garlic

1. Little oil in a large pan and add the Chicken.
2. In a separate frying pan add the Mushrooms, Onion & Garlic. Keep on a low heat, as you just want to soften these.
3. Small pan, add water, boil, add Broccoli.

4. Once the Chicken looks like it's cooking, no pink showing, add the Bacon to it and stir.
5. By this time the Mushrooms, Onion, Garlic should of softened nicely, add them to the Chicken & Bacon. Stir. Turn down heat, leave to simmer.
6. Once Broccoli is cooked, drain and add to the pan of Chicken, Bacon etc
7. Give it all a big stir and leave to simmer on a low heat. (If you have some 'water' in the bottom of the pan, turn the heat up slightly and cook this off).

Wash Up!
**Tip - Have your sink already filled with water & bubbles. 
Wash up as you go, saves time later & that dreaded after dinner feeling 
of having to wash the dishes! 
Keeps the kitchen tidy too,
 especially if you have a ridiculously small kitchen like mine!
Or, if you have a dishwasher, load as you go!

8. Put some water on to boil for your pasta or rice noodles. (we had rice noodles, they don't bloat you as much!)
9. Make up your sauce as per instructions. I added a little bit of grated cheese, as had some spare in the fridge!
10. Once the sauce is ready add to your Chicken, Bacon mixture and stir it well, so everything's covered with the sauce.
11. Finish making up your pasta or rice noodles. Drain.
12. Put a serving of pasta/rice noodles on a plate and a big dollop of your Alfredo Chicken.

Sorry about the poor picture, hubby was starving and wanted his dinner!
